Skip the box and make your own shelf stable Scalloped Potato Mix. You control the ingredients, no artificial flavors, colors or fillers. This is a delicious way to use your dehydrated potatoes. Bulk Mix: 2 c. powdered milk 1 c. white flour 1 c. corn starch 1/2 c. dried onion flakes or 8 t. onion powder 1/2 c. dried chives or parsley flakes 2 - 3 T. seasoned salt 2 T. dried mustard powder 1 T. black or white pepper 1 T. garlic powder (Add 1 c. powdered cheese to make Potatoes Au Gratin) To make scalloped potatoes: 1/2 c. mix 3 c. dehydrated potatoes 1 c. cold water or milk 2 c. hot water 4 T. butter For long term storage Scalloped Potatoes in a Jar (or other air tight container) 1/2 c. Mix 3 c. Dehydrated potatoes Single batch: 3 c. dehydrated potatoes 1/4 c. powdered milk 2 T. flour 2 T. cornstarch 2 t. onion flakes or 1 t. onion powder 1 T. dried parsley or chives 1 t. salt 1 t. mustard powder 1 t. pepper 3 c. water 4 T. butter Add 1/4 c. powdered cheese to make potatoes Au Gratin or add fresh shredded cheese to taste Potatoes Stroganoff: Add 1 lb. browned ground beef, 1 c. fresh sauteed mushrooms, 2/3 c. sour cream and 2 T. Worcestershire Sauce to above mix before baking. To use sauce mix with fresh potatoes: use about 1 1/2lbs of sliced fresh potatoes, 2 cups of milk or water (or combination), 1/2 c. dry mix.
