Chilli Chicken is a popular Indo-Chinese dish of chicken. It is popularly served as a starter dish at restaurants. In India, this may include a variety of dry chicken preparations. Though mainly boneless chicken is used in this dish, some people also recommend to use boned chicken too. Ingredients :- FOR MARINATION :- Chicken (boneless) - 500 gm, Ginger-Garlic paste - 2 tbsp, Black Pepper powder - 1 tsp, Salt - To taste or 1 tsp, Vinegar - 1 tbsp, Cornflour (Araroat) - 3 tbsp, All Purpose flour (Maida) - 2 tbsp, Egg - 1 nos, Mustard Oil - 1 tbsp, Cooking Oil - For deep frying, FOR GRAVY :- Garlic (Chopped) - 1 tsp, Ginger (Chopped) - 1 tsp Spring Onion (Finely cut white part) - 1 small bowl, Onion (Cut into cubes) - 2 medium size, Capsicum (Cut into cubes) - 1 medium size, SAUCE & CORNFLOUR SLURRY :- Water - 200 ml, Vinegar - 1 tbsp, Soya Sauce - 2 tbsp, Red Chilli Sauce or Schezwan Sauce - 2 tbsp, Tomato Sauce - 2 tbsp, Cornflour (Araroat) - 1 tbsp, Black Pepper powder - 1/2 tsp, Salt - To taste or 1/2 tsp, Sugar - 1/2 tsp, Green Chillies - 2 nos, Spring Onion (Finely cut Green part) - 1/2 bowl, METHOD :- 1) First, Chicken 500 gm cut into 1 inch sized pieces, Now let us marinate it, For this, we need Ginger-Garlic paste - 2 tbsp, Black Pepper powder - 1 tsp, Salt - To taste or 1 tsp, Vinegar -1 tbsp, Cornflour (Araroat) - 3 tbsp, All Purpose flour (Maida) - 2 tbsp, Egg - 1 nos, Mustard Oil - 1 tbsp, Mix them well and marinate for 30~45 minutes in refrigerator. 2) Take out the chicken from refrigerator & now deep fry the marinated pieces & fried pcs keep in separate plate. 3) To make sauce & cornflour slurry, we need 200 ml water in a bowl, add them, Vinegar -1 tbsp, Soya Sauce -2 tbsp, Red Chilli Sauce or Schezwan Sauce -2 tbsp, Tomato Sauce -2 tbsp, Cornflour (Araroat) -1 tbsp, Mix them well and make a slurry, keep it aside. 4) In a wok or deep iron kadahi, heat cooking oil - 2 tbsp, 5) To the hot oil add Garlic (chopped) - 1 tsp, Ginger (chopped) - 1 tsp, saute well to 15 ~20 seconds. Add Spring Onion (finely cut white part) - 1 small bowl, Saute well for 1 minutes, Add Onion (cut into cubes) - 2 medium size &, Capsicum (cut into cubes) - 1 medium size, Saute them well till 1 to 1.5 minutes. 6) Then add Sauce & cornflour slurry. Add black pepper, salt & sugar. Saute only after boil comes in slurry. Now gravy is boiling. Saute well for 1 to 1.5 minutes. 7) Now add fried chicken pieces and mix well for another half minutes. 8) Add green chillies & spring onion green part and mix well. 9) Now our Chilli Chicken is ready to serve. Have it with Roti, Parantha, Naan or Fried rice.
